Boiling an unopened can of sweetened condensed milk is the safest way of "gentle heating" it. Other way it may explode. (Experienced that myself. The most unpleasant part was the cleaning of the kitchen ceiling.)

Whoa! That was probably terrible but at least it sounds spectacular. 

That reminds me that I mean to try making banoffee pie at some point. I'll should probably wait for a potluck though, so I don't make myself insulin-resistant.

Mel, are you a diabetic tambien? I've been one since I was 13 or so, and I'm 30 now, but I didn't know we can become insulin resistant from eating sweets x.x I just try to avoid eating too much sweets unless I have low blood sugar!
