Deer seem to always survive a shot that's not critical. Bear and Wolves can always be found later by mapping from a high vantage point or by crows whether you go inside or not. Shooting a bear face-on, in the neck which is higher than the face, gives you a very high chance of a critical hit. HOWEVER your adrenalin will go through the roof and you will need nerves of steel. Always be crouched too for better stability and he won't see you as quick. And stay close to rocks etc it seems to work as cover.
